Winemakers can achieve an effect similar to that of aging the wine in oak barrels with the addition of oak chips. The addition of oak imparts warm, toasty, vanilla flavors and fragrances which can contribute to the overall character of the wine. Oak can even the early drinkability of certain wines. It is important not to over-oak a wine as it may overpower the wines natural varietal characteristics.
